Whole Foods only had bunches of beets, and I was less than happy about it. But when I got home, Google helped me discover that people actually eat the green stuff that grows on the other end of the yummy beet. Now we all know that if it's green and leafy, it's probably less than tasty. So how do you fix it? Just add bacon.
Remove the stems from the leafy parts. Lose the stems and chop the leafy part into nice bite-size pieces.
Saute some bacon, onion and garlic.
Add about 3/4 cup of water, a tablespoon of sugar and the leaf bits. The water (and everything else) turns beet purple.
Bring to a boil and cook 5-ish minutes until tender. Give it a good splash of cider vinegar.
Be sure to tell your mom you ate your greens. Leave out the part where they were cooked in sugar and bacon.
