I had a very yummy beet and goat cheese antipasto at the National Gallery of Art last week. Here's my take on it. (And by take I mean I didn't really succeed in recreating it, but the result was still pretty tasty.)

I love beets (part 2)
Whole Foods only had bunches of beets, and I was less than happy about it. But when I got home, Google helped me discover that people actually eat the green stuff that grows on the other end of the yummy beet. Now we all know that if it's green and leafy, it's probably less than tasty. So how do you fix it? Just add bacon.
